Recipe: Summer Squash Power Noodles

Hummus is a magical food. Second, only to guacamole as the national dish of Millennials, it graces party platters, lunch boxes, and refrigerators from Tel Aviv to Timbuktu and back again. But this creamy spread is good for more than just dipping carrots and pretzels into and today I have a recipe for you that will change the way you see this Middle Eastern classic: Summer Squash Power Noodles.

I call them Power Noodles because unlike traditional noodles that weigh you down and expand your waistline, these bad boys fill you up and leave you feeling light and powerful, rather than stuffed and sluggish. The best part is, there are only six ingredients. Just six! And every single one of them is completely packed with nutrients, full of flavor. So even if you’re completely exhausted at the end of the day, you’ll be able to whip this up. You’ll just need a spiralizer, a bowl and spoon, and about 10 minutes.

RECIPE

Serves 2-3

Prep Time: 10 mins

Ingredients:

8 oz Summer Squash (about 2 Large Summer Squash)

8 oz. Zucchini (about 2 large Zucchini)

2 Tablespoons Classic Hummus

Juice ½ Lemon

1 Handful Cherry Tomatoes

1 Handful Fresh Basil

Salt and Pepper

  1. Spiralize your squash. You can either use a spiralizer, or you can buy pre-spiralized veggies which are becoming widely available. I used a mix of Summer Squash and Zucchini, but feel free to you either one or both!

  2. Add your hummus, lemon juice, and salt and pepper. Toss them all together until the noodles are completely coated.

  3. Set your noodles aside. Quarter your tomatoes and chop your basil.

  4. Sprinkle the tomatoes and basil on your noodles, add a few dashes of salt and pepper, and serve.

See? I told you that was easy. These noodles are sure to be a hit with all your nearest and dearest. They are a great side dish to bring to summer barbecues, a beautiful office lunch that will make all your co-workers frown at their sad desk salads, or the freshest of light dinners.
